Carrot Ginger Soup Recipe

I have been OBSESSED with this soup lately. This soup is yet another recipe I’ve been making as a result of ordering too many of one thing with my grocery delivery, hah! I wanted four carrots, I got four bags of carrots – enter soup recipe time! This recipe comes from the FIXATE 2 cookbook, which is part of the Ultimate Portion Fix program (what I use to plan my meals weekly). I’m telling you, the recipes that Bobby Calabrese creates are truly delicious! I’ve been so happy with everything I’ve been making. I’m sharing this carrot ginger soup recipe with you below. Enjoy!


Serves: 5 (approx. 1 cup each)
Prep time: 20 mins
Cooking time: 45 mins


  • 1 tsp olive oil
  • 1.5 cups chopped onion
  • 4 cups chopped carrots
  • 3 cups low-sodium vegetable broth
  • 1 Tbsp grated fresh ginger (or 1 tsp ground ginger)
  • 2 Tbsp fresh lime juice
  • 2 tsp coconut sugar
  • 1 tsp sea salt
  • 0.5 tsp pepper
  • 1 cup canned coconut milk

Preparation Instructions:

  1.  Heat oil in large soup pot over medium heat until fragrant.
  2. Add onion; cook, stirring frequently, for 3 or 4 minutes, or until soft.
  3. Add carrots, broth, ginger, lime juice, sugar, salt, and pepper. Bring to a boil. Reduce heat to medium-low; gently boil, partially covered, stirring occasionally, for 30 minutes, or until carrots are very soft.
  4. Add coconut milk. Bring back to a gentle boil. Remove from heat.
  5. Using an immersion blender, blend until smooth.
  6. Serve approx. 1 cup soup each.

Extra notes:

  • If you want the soup to have a little more zip, you can add an additional tsp of grated ginger and an additional tsp of lime juice after you’ve blended with immersion blender (sometimes I add them in, sometimes I don’t).
  • Top w/0.5 tsp of lime peel garnish if desired.
  • You can add a little extra vegetable broth if you don’t want your soup as thick.

This soup stores well in the fridge for 5 days, or you can freeze it for up to 3 months!
